Boursin and Bacon Stuffed Chicken

I think this was one of my first escapades. And, what I realized after this was that I in fact hate bacon. Yes, said it. I HATE BACON. There’s something about the taste of it that just makes me not. So, next time I ever make this, I will make it sans pork, I’m sorry if that makes you hate me, but, this is how I feel.

The recipe for this dish came from one of my favorites, Chrissy Teigen. I left out the proscuito because again, not a fan, but other wise pretty much stuck to what she did. I served it with rice which had grated carrots in there, because “health” and also a little tossed salad – mixed greens from Trade Joes, red onion, avocado and drizzled with a little olive oil
