It was pretty good considering we are not experts at Indian food. The adaptation was based off of THIS original recipe
What did we change? I’m glad you ask. We definitely ended up using chicken breast instead of a whole chicken – and we made sure it was boneless, because, no one likes bones. Then we omitted saffron, because SOMEONE doesn’t like saffron. We also omitted the blanched onions. Also we added in one full tomato (for color)
Also it was not until rice was already soaked that we realized that this recipe for two was really going to serve an entire army (3 cups of rice) so I want to say that we actually ended up using maybe like 2 cups of rice – perhaps a tad bit more.
Overall it turned out pretty good – we could have used more spice, but it’s ok. The accompaniment we used was raita, which was delish 🙂
1/2 cucumber diced
1/2 red onion chopped
1 roma tomato chopped
3/4 – 1 cup yogurt
Bunch of chopped cilantro
CUMIN or if you are Indian
Put all the veggies in a bowl, mix with yogurt and cumin
