Summertime Freshness

The best thing about summertime is the three months we get off.

Oh, just kidding I am an adult and that ends once you graduate college 😦

Anyways the next best thing about summertime is summertime vegetables (livin the life here as you can see)

As much as I love a salad for lunch, I get bored of it. This is a pretty delicious alternative (literally it’s pretty)

Needs

Pack of three different colored bell peppers

Pack of Asparagus

Broccoli

1 onion

Tofu/chicken/protein of your choice

Note that you can put in as many or as little veggies as you like – it’s up to you and your preferences

Directiones

Add in a little EVOO  to your pan and start browning your protein, add in the veggies until cooked – don’t ovecook because you will regret it…

Add in some salt and pepper – and whatever else seasoning you like

Lunch for the week, done.
