Spicy Chipotle Chicken with Mango Avo Salsa + Quinoa

DATE NIGHT tonight.

So what do we make? Spicy Chipotle Chicken with Mango Avocado Salsa, and Quinoa (made by my lovely friend)

And Wine, lots of Wine.

Spicy Chipotle Chicken

Spicy Chipotle Sauce (Recipe Below)

Chicken of some sort  – I used boneless, skinless chicken breast


Marinate the chicken overnight – do not use all the marinade because as it’s cooking you’ll want to coat the chicken

Grill using oven or outside BBQ grill – as you see the chicken getting dryer brush with sauce –  I would cook for at least 45 minutes because no one likes an uncooked chicken

Chipotle Marinade

2 cans Chipotle peppers in Adobo

1 Trader Joe’s garlic packet

1 cup BBQ sauce

3/4 cup brown sugar

1 cup lime juice

2 tbsp EVOO

1/4 cup whiskey – HAH

Pinch of salt – whatever the hell that means to you


Combine and Blend – wow. How much easier could it be?

Mango Avocado Salsa

1 Mango diced

1 Avocado Diced

1 Bunch of Cilandro chopped


Salt and Pepper


MIX and serve

See, so simple. So so so so simple.
