Rama Rama Rama Tofu

This is without doubt my favorite thing to order when I go out to Thai. Why? Because, peanuts. What more reason does one need? Oh right, it’s peanuts AND coconut. Game over basically.

I’m not sure what inspired me to make this because I have no issues going to Thai restaurants and ordering, but here we are. This was surprisingly simple to make, like really really surprisingly simple. Maybe I made it wrong, but it’s ok, it was beyond delicious.


Firm Tofu – cut into whatever size pieces you prefer

1 Bag of Baby Spinach from Trader Joe’s

Peanut Sauce

1 Cup of Chunky Peanut Butter

1 Bag of TJ’s garlic chopped up finely

1 Onion sliced finely

2 tbs EVOO

2 tbs Soy Sauce (original recipe calls for fish sauce – use at own risk)

3 tbs packed brown sugar

Paprika to taste

Red Chili Flakes to taste

Siracha because you’re eating asian

1 cup coconut milk (the kind to cook with not to drink)


– Saute the tofu till slightly browned – set aside

– In a saucepan add EVOO, onion and garlic – cook 2 minutes until tender

– Add in Peanut Butter, Soy Sauce, Brown Sugar, Chili Flakes and Paprika – stir until somewhat smooth

– Slowly stir in the coconut milk until well blended – remove from heat and add in as much hot sauce as you can handle

– Pour sauce over Tofu and cook over real low heat for about a minute or so

– Lightly cook spinach – I dumped mine in hot water for not even a minute and took it out

– Lay bed of spinach on plate and top with Tofu
