Breakfast Casserole

Because, Breakfast is the most important meal of the day. That’s why you should have it for breakfast, lunch and dinner whenever you can. At least, that’s what my advice to you is.

So this casserole, it happened because of Pinterest, it also happened because making breakfast burritos every morning is extremely time consuming and tiring and now I can’t even see look at another burrito in the face for a while.

Super simple recipe, barely any dishes, enjoy.


12 eggs

1/4 cup milk

2 spoons greek yogurt – or if you’re feeling daring, heavy cream

Pepper Jack Cheese – as you see fit

Sharp Cheddar Cheese – as you see fit

1/2 onion chopped

1 red bell pepper chopped

1/2 cup broccoli florets

3 cups frozen hashbrown

Parsley for seasoning

Salt and Pepper for Seasoning


Saute onion and bell pepper in a pan – set aside

In a bowl mix together hashbrown and cheeses + add salt and pepper to taste

In another bowl mix eggs, milk, and yogurt – season with salt and pepper

In a greased dish place hashbrown mixture – on top place broccoli florets

Place bell pepper onion mixture on top of the broccoli, and then cover with egg mixture

Sprinkle cheese on top, and some parsley

Bake at 350 for around 50 minutes – until eggs are fully cooked – might take a bit longer based on how well done you like your eggs
