Mom’s Day Brunchie

I know it was 2 weekends ago, but mother figure was otherwise occupied so we celebrated this weekend.

The menu included your typical brunch foods like eggs, potatoes, berries, and champagne.


Mixed Greens

Pine Nuts

EVOO + Balsamic + since our balsamic finished I added in some Red Wine Vinegar + 1/2 juice of lemon + a pinch of sugar + Black Pepper

Garlic Smashed Potatoes

1-2 bags of red baby potatoes

1 bag of Trader Joe’s peeled garlic chopped

EVOO + Salt + Pepper

Boil the Potatoes for a little bit till soft, drain and smash slightly – top with EVOO, garlic, salt and pepper

Bake for about 35-45 minutes (till crispy on top)

Garnish with Parsley

Baked Eggs in Bread

This was a win, and I’m so happy it turned out to be a win rather than not a win.

Spinach chopped

Red Onion chopped

1 bag Trader Joe’s peeled garlic chopped

1/3 cup heavy cream/milk/whatever you want

10 eggs

1 baguette of choice (take the top off and innards out- you can cut them up in pieces and toast them – makes for a great pregame snack before brunch)

Shredded Pepper Jack Cheese

In a pan, saute garlic, onion and spinach slightly (I added in a jalapeno too)

In a separate bowl – crack all the eggs, add in milk/cream and whisk for a bit – season with salt, pepper, red pepper flakes and some chili powder

Mix in sauteed vegetables into eggs

Pour egg mixture into bread bowl – top with cheese

Bake for 60-80 minutes (make sure that egg is COOKED)

Garnish with parsley
