Cake Cake Cake Cake…And it’s not even my birthday….

Sometimes you’ve just gotta make carrot cake, it’s just what you do. So I went to my best source, to find a recipe suitable for my insane carrot cake craving and thankfully I found one that was so incredibly simple it’s so sad.

Things you need

  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 bag of shredded carrots


Mix up wet ingredients in one bowl (Sugar, Oil, Vanilla, Eggs)

Mix up dry ingredients in another (Flour, Baking Soda, Salt, Cinnamon)

Slowly mix dry ingredients into wet ingredients – mix well!

Fold in raisins, walnuts and carrots

Butter or Foil two 9′ rounds

Bake at 350 for 60 minutes

We added in cream cheese frosting because, why not?


1 Cream Cheese

1/2 cup Powdered Sugar

1 tsp Vanilla Extract

1 tablespoon of butter
