Post thanksgiving = carbless life time. Chicken Milanese typically is something I’d stay away from since it’s breaded but, almond meal.
- 2 Chicken breasts
- Mozzarella Cheese
- Almond Meal – about 1-2 cups, seasoned with salt and pepper
- 2 eggs lightly beaten
- 1/4 cup flour seasoned with cayenne pepper, salt and pepper
- Arugula bed with EVOO, balsamic, salt and pepper
- Oil for Pan
Pound Chicken breast using meat pounder or anything else ( I used a rolling pin) Make sure that its super super super super thin – so that it cooks well
Lightly flour the chicken around the sides and fold with cheese and cayenne pepper
Place the folded chicken in egg and coat nicely, then coat with almond meal – place in lightly oiled skillet and cook until done
Serve on a bed of arugula and enjoy!
